Oven Roasted Chicken With Peach & Chilli Marinade

Someone recently asked for a recipe using chicken, and to my shock I discovered that this is something we haven't done a tutorial of yet.
This marinade is very versatile and can be used on a variety of meats including chicken, pork and steak. Use it as a basting sauce, a marinade to soak in or inject into the meat/roast.
Oven Roasted Chicken with Peach & Chilli Marinade
Step 1: Gather your ingredients

For our project we used a whole chicken, defrosted in the fridge overnight. We decided to make a marinade that will be injected into the chicken, but it works just as well as a marinade that you can lay the chicken in for a couple of hours before cooking. The ingredients we used are as follows: - 1/2 cup Peach & Chilli Chutney - 1/4 cup Peach & Chilli Jam - 1/4 cup Lemon Juice - 2 tablespoons Worcestershire Sauce - Bit of oil to mix - Spices to taste Mix all the ingredients together to combine into a smooth sauce. Other ingredients can be added as desired like tomato sauce, or beer or cider. Beer is great to use especially when you are working with meat that could be tough, as it has tenderizing properties.

Cut your onions and garlic and form a bed at the bottom of your dish.

Place your chicken on this layer.

Start injecting your marinade into the chicken, sticking the needle just under the skin. If you do not have a needle to inject with, pierce the skin with a fork and drizzle the marinade over the chicken.

After the chicken has been injected to capacity, baste it in the leftover marinade and spice to your liking.

Cover the chicken with foil and put in a preheated oven of 180° Celsius.

Bake for approximately an hour and then remove the foil covering. Then bake for another 15-20 minutes uncovered. Oven times may vary, please keep an eye on the dish while it is cooking.
Your chicken will be juicy, tender and absolutely delicious!

Dish up with a salad for a healthy option. You can also add baked potatoes, rice, green beans, pumpkins and other vegetables that you prefer. Alternative ingredients include:
