Ingredients:
200g fresh or dried wheat noodles
3 tablespoons chili oil
2 tablespoons soy sauce
1 tablespoon black vinegar
2 cloves garlic, minced
1 teaspoon sugar
1 teaspoon sesame oil
1/2 teaspoon salt
1/2 cup scallions, finely chopped
1/4 cup roasted peanuts, crushed
Optional: 1 teaspoon Sichuan peppercorns, toasted and ground
Instructions:
Cook the Noodles:
Bring a large pot of water to a boil. Cook the noodles according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
Prepare the Sauce:
In a small bowl, combine chili oil, soy sauce, black vinegar, minced garlic, sugar, sesame oil, and salt. Mix well.
Assemble the Dish:
Place the cooked noodles in a large mixing bowl. Pour the sauce over the noodles and toss to coat evenly.
Garnish:
Add the finely chopped scallions and crushed peanuts to the noodles. Toss again to combine.
Serve:
Transfer the noodles to serving bowls. If desired, sprinkle with ground Sichuan peppercorns for an extra kick of flavor.
