Ingredients:

  • 200g fresh or dried wheat noodles

  • 3 tablespoons chili oil

  • 2 tablespoons soy sauce

  • 1 tablespoon black vinegar

  • 2 cloves garlic, minced

  • 1 teaspoon sugar

  • 1 teaspoon sesame oil

  • 1/2 teaspoon salt

  • 1/2 cup scallions, finely chopped

  • 1/4 cup roasted peanuts, crushed

  • Optional: 1 teaspoon Sichuan peppercorns, toasted and ground


Instructions:

  1. Cook the Noodles:

  • Bring a large pot of water to a boil. Cook the noodles according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

  1. Prepare the Sauce:

  • In a small bowl, combine chili oil, soy sauce, black vinegar, minced garlic, sugar, sesame oil, and salt. Mix well.

  1. Assemble the Dish:

  • Place the cooked noodles in a large mixing bowl. Pour the sauce over the noodles and toss to coat evenly.

  1. Garnish:

  • Add the finely chopped scallions and crushed peanuts to the noodles. Toss again to combine.

  1. Serve:

  • Transfer the noodles to serving bowls. If desired, sprinkle with ground Sichuan peppercorns for an extra kick of flavor.
